Blue Butterfly Pea Flower is a little blue flower native to Southeast Asia. It is also commonly known as Blue Pea and Asian Pigeonwings and is a very common drink in South East Asia.
The magic color change in this tea comes from a high concentration of a blue-violet plant pigment called anthocyanin; the color of this pigment depends on the acidity of its environment. It starts out blue, and slowly changes to purple and then magenta the more acidic its environment. Adding a few drops of lemon juice will produce rich velvety purple colour, and adding a few hibiscus leaves will change colour towards bright red.
Adding lime juice or roselle changes the PH of the drink which causes the color to change from deep blue to purple or even red.
If you are into making cocktails it is an easy thing to make some ice with diluted lime juice and the drink will gradually change color as you drink it and making a ring of color that cocktail makers call a mood ring.
No floral taste here! Blue pea is naturally free from caffeine and results in a refreshing subtle herbaceous flavour.
Butterfly Pea Tea is a simple drink that is common across Thailand where it's called Nahm Dok Anchan.
Easy Recipe
INGREDIENTS:
1 Cup Dried Butterfly Pea Flowers
1 Liter Drinking Water (2 pints)
1 Tablespoon Honey
2 Tablespoon Brown Sugar
2 Limes
1 Can Sprite
1 Bottle Soda Water
INSTRUCTIONS:
Making The Concentrate-
Boil the water in a saucepan.
When the water has boiled remove from heat and add in the flowers. Cover & allow to sit for 5 minutes. Strain.
Whilst still warm add the honey and brown sugar and stir to dissolve (you can adjust sweetness by adding more or less to your taste.)
Making a Beautiful & Magical Drink-
Pour about 1/4 to 1/3rd of the tea concentrate into a glass with ice and add 2 teaspoons of lime juice and the blue color will turn to purple like magic.
Top up with soda, sprite or 7-up or just plain water. You can also drink like hot tea with some snacks.
How long should Butterfly Pea Tea Steep or Brew?
Butterfly Pea Tea should steep for about 5 minutes for the best results. After 5 minutes remove the flowers and drink either hot or cold with ice cubes as a cooler. Add in lime or lemon and honey and also try adding soda as a spritzer. It’s a great summer drink and fun for the kids.
